The Chacewater Olive Mill is open to growers who want their fruit pressed to the same standard we hold our own. Italian equipment, a CCOF-certified facility, and Emilio at the helm: your olives are in good hands.

The Chacewater Olive Mill is built around a Pieralisi Vanguard 2 Phase system — one of the finest small-production olive mills available. The same mill we use for our own award-winning oils is available to growers in Lake County and the surrounding region.

Our Mill Master, Emilio De La Cruz, has been running olive operations since the mill's early days under the original monastery ownership. He knows this equipment and this craft better than just about anyone in Northern California. Bring your olives and let him get to work.

Built for Premium Production.

The Pieralisi olive mill has been upgraded to a bigger mill—three malaxer compartments.
We can now process 2000 lbs per hour through the bigger centrifuge.
01.

Leaf and Stem Remover

Before anything touches the mill, leaves and stems are removed from your fruit. Clean olives mean cleaner oil with less bitterness and better flavor clarity from the very first stage.
02.

Washer

The olives are washed thoroughly before crushing. Removing surface contaminants at this stage protects the integrity of the oil and keeps the flavor profile exactly where it should be.
03.

Hammer Crush

The hammer crusher breaks the olives down into a paste without generating excessive heat. Cold crushing preserves the natural polyphenols and aromatics that give great EVOO its character.

Three Compartment Malaxer

he olive paste is slowly churned in our three-compartment malaxer — a critical step that allows oil droplets to coalesce before separation. Each compartment handles 1000 lbs at a time.
05.

Centrifuge

The centrifuge separates oil from water and solids at high speed. Each 1000-lb batch runs in 30 to 45 minutes — efficient enough to keep harvest-day throughput moving without compromising quality.
06.

Vertical Separator (Finisher)

The vertical separator removes any remaining moisture or fine solids from the oil, delivering a clean, polished extra virgin olive oil ready for consumption, storage or bottling.

Our milling service covers the full production process from the moment your olives arrive to the moment your finished oil is ready to go. Emilio and the team handle every step.

Intake and Inspection
We receive your olives and inspect the fruit before milling begins. Quality in means quality out.

Complete processing through our Pieralisi line — cleaning, crushing, malaxing, centrifuging, and finishing.

CCOF Certified Facility
Our entire milling operation is certified organic by California Certified Organic Farmers. Eligible growers can carry that certification through to their finished oil.

Emilio De La Cruz has run this mill for years. You get his hands-on involvement at every stage, not just a machine and a timer.

Finished Oil Handover

Receive & Clean

Leaves and stems removed, olives washed and inspected before anything enters the mill.

Hammer Crush a Quote

Hammer crusher breaks the fruit into paste without excess heat — protecting aromatics and polyphenols.
03.

Malax

The paste is slowly churned in our two-compartment malaxer at 1200 lbs per compartment to consolidate oil droplets.
04.

Centrifuge

1200 lbs per 30 to 45-minute run — oil separated from water and solids at speed.
05.

Finish & Store

Vertical separator polishes the final oil. Clean, finished EVOO ready for your container.
